Banana Berry Pancakes

Using a few simple ingredients.. these Vegan, gluten-free and paleo pancakes are great served at breakfast or brunch!


Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Serves: 6


Ingredients:

  • 1 cup of fresh blueberries
  • 1 large ripe banana
  • 1 cup unsweetened almond milk (or preferred plantbased milk) *add more for desired consistency 
  • 1 1/2 cups of brown rice flour
  • 2 tsp baking powder (gluten-free)
  • 1 tbsp ground flaxseed (after adding 3 tbsp of water & letting sit for 5 min) 
  • 1 tsp cinnamon
  • pinch of pink Himalayan salt


Instructions:

  1. In a large bowl, mix all ingredients together
  2. Add 1 tsp of olive or coconut oil to pan and heat on medium heat.
  3. When hot, pour desired amount of batter in pan to form pancake.
  4. Cook for a few minutes until each side is golden brown. Repeat
  5. Serve pancakes with fruit and syrup (suggested: Agave or coconut nectar)
