"Using a few simple ingredients.. these Vegan, Gluten-free and Paleo pancakes are great served at breakfast or brunch! "
Ingredients:
- 1 cup of fresh blueberries
- 1 large ripe banana
- 1 cup unsweetened almond milk (or preferred other) *add more for desired consistency
- 1 1/2 cups of brown rice flour
- 2 tsp baking powder
- 1 tbsp ground flaxseed *add 3 tbsp of water & let sit for 5 min.
- 1 tsp cinnamon
- pinch of Himalayan pink salt
Instructions:
- In a large bowl, mix all ingredients together.
- Add 1 tsp of olive oil (or preferred other) to pan, and heat on medium.
- When hot, pour in desired amount of batter in pan.
- Cook for a few minutes until each side is golden brown. Repeat.
- Serve with preferred syrup or fruit topping.. Enjoy!
