Banana Berry Pancakes

"Using a few simple ingredients.. these Vegan, Gluten-free and Paleo pancakes are great served at breakfast or brunch! "


Ingredients:

  • 1 cup of fresh blueberries
  • 1 large ripe banana
  • 1 cup unsweetened almond milk (or preferred other) *add more for desired consistency
  • 1 1/2 cups of brown rice flour
  • 2 tsp baking powder
  • 1 tbsp ground flaxseed *add 3 tbsp of water & let sit for 5 min.
  • 1 tsp cinnamon
  • pinch of Himalayan pink salt


Instructions:

  1. In a large bowl, mix all ingredients together.
  2. Add 1 tsp of olive oil (or preferred other) to pan, and heat on medium.
  3. When hot, pour in desired amount of batter in pan.
  4. Cook for a few minutes until each side is golden brown. Repeat.
  5. Serve with preferred syrup or fruit topping.. Enjoy!
