Using a few simple ingredients.. these Vegan, gluten-free and paleo pancakes are great served at breakfast or brunch!

Ingredients:
- 1 cup of fresh blueberries
- 1 large ripe banana
- 1 cup unsweetened almond milk (or preferred plantbased milk) *add more for desired consistency
- 1 1/2 cups of brown rice flour
- 2 tsp baking powder (gluten-free)
- 1 tbsp ground flaxseed (after adding 3 tbsp of water & letting sit for 5 min)
- 1 tsp cinnamon
- pinch of pink Himalayan salt
Instructions:
- In a large bowl, mix all ingredients together
- Add 1 tsp of olive or coconut oil to pan and heat on medium heat.
- When hot, pour desired amount of batter in pan to form pancake.
- Cook for a few minutes until each side is golden brown. Repeat
- Serve pancakes with fruit and syrup (suggested: Agave or coconut nectar)
