Chickpea & Carrot Soup

The perfect example of comfort food.. warm, inviting, full of creamy goodness and a great source of protein!


Ingredients:

  • 2 large peeled carrots
  • 1 chopped small onion
  • 2 cups of rinsed pre-soaked chickpeas (see pre-soak instructions below)
  • 4 cups of water
  • 1 tbsp of olive oil, extra virgin
  • 1 tsp of Himalayan pink salt
  • 1/2 tsp of garlic
  • 1/2 tsp of onion powder
  • 1/4 tsp of black pepper
  • 1/4 tsp of curry powder
  • 1/4 tsp of ginger
  • Oregano


Instructions:

  1. Boil carrots until tender and set aside.
  2. Pre-soak chickpeas at least 8 hrs prior or overnight and rinse well.
  3. Cook chickpeas, water, oil, salt, onion & all spices together until tender, then cool slightly.
  4. Puree cooked carrots along with the broth from the Chickpeas together.
  5. Plate carrot puree and add a scoop of the cooked chickpea mix.
  6. Garnish as desired (suggestions.. fresh basil, chia & hemp seeds)

**Pre-soaking instructions: submerge chickpeas in warm water.. add 1 tsp of baking soda & apple cider vinegar. Let soak for at least 8 hrs or overnight. Rinse well and cook.
