Chickpea & Carrot Soup

"The perfect example of comfort food.. warm, inviting, full of creamy

goodness and a great source of protein!"


Ingredients:

  • 2 large peeled carrots
  • 1 small chopped onion
  • 2 cups of pre-soaked chickpeas*
  • 4 cups of water
  • 1 tbsp of extra virgin olive oil
  • 1 tsp of Himalayan pink salt
  • 1/2 tsp of garlic powder
  • 1/2 tsp of onion powder
  • 1/4 tsp of black pepper
  • 1/4 tsp of ground curry
  • 1/4 tsp of ground ginger
  • sprinkle of oregano


Instructions:

  1. Boil carrots until tender and set aside.
  2. Cook chickpeas, water, oil, salt, onion and all spices together. Cool slightly.
  3. Puree cooked carrots along with only the broth from the chickpeas.
  4. Plate carrot puree and add a scoop of the cooked chickpea mix.
  5. Garnish as desired.. Enjoy! 


*Pre-soaking instructions: Submerge chickpeas in warm water. Add 1 tsp of baking soda

& apple cider vinegar. Let soak for at least 8 hours or overnight. Rinse well and cook.
