The perfect example of comfort food.. warm, inviting, full of creamy goodness and a great source of protein!
Ingredients:
- 2 large peeled carrots
- 1 chopped small onion
- 2 cups of rinsed pre-soaked chickpeas (see pre-soak instructions below)
- 4 cups of water
- 1 tbsp of olive oil, extra virgin
- 1 tsp of Himalayan pink salt
- 1/2 tsp of garlic
- 1/2 tsp of onion powder
- 1/4 tsp of black pepper
- 1/4 tsp of curry powder
- 1/4 tsp of ginger
- Oregano
Instructions:
- Boil carrots until tender and set aside.
- Pre-soak chickpeas at least 8 hrs prior or overnight and rinse well.
- Cook chickpeas, water, oil, salt, onion & all spices together until tender, then cool slightly.
- Puree cooked carrots along with the broth from the Chickpeas together.
- Plate carrot puree and add a scoop of the cooked chickpea mix.
- Garnish as desired (suggestions.. fresh basil, chia & hemp seeds)

**Pre-soaking instructions: submerge chickpeas in warm water.. add 1 tsp of baking soda & apple cider vinegar. Let soak for at least 8 hrs or overnight. Rinse well and cook.
