"Just in time for the holidays! Indulge in these Vegan/Gluten-free
treats.. with a familiar taste of the season.."
Ingredients:
- 2 cups of gluten-free flour
- 1/2 tsp of xanthan gum
- 6 tbsp of coconut sugar
- 3 tsp of baking powder
- 1/2 tsp of baking soda
- 1/2 tsp of Himalayan pink salt
- 1 tsp of ground cinnamon
- 1/2 tsp of ground nutmeg
- 1 cup of diary free eggnog
- 6 tbsp of melted coconut oil
- 2 tsp of white vinegar
- 1 tsp of pure vanilla extract
Eggnog frosting
- 1 1/2 cups of sifted organic icing sugar
- 2-3 tbsp of diary free eggnog
- Nutmeg for sprinkling
Instructions:
- Preheat oven to 400 F. Grease donut pan and set aside.
- Sift together flour, sugar, baking powder, baking soda, salt, and spices.
- In a separate bowl.. mix eggnog, oil, vinegar and vanilla together.
- Combine and mix wet & dry ingredients well.
- Use a piping bag to fill donut pan molds about 3/4 full with batter.
- Bake for 10-12 minutes until fully cooked. Place on cooling rack.
- For eggnog frosting.. whisk together sugar and eggnog until smooth.
- When donuts have cooled.. glaze tops with frosting. *Dip twice for thickness.
- Sprinkle on nutmeg.
