Moong Dal

Both sweet & savory.. an Indian entree that combines mung beans, herbs & spices together to form a nutrient rich dish & a warm inviting way to welcome the season..


Serves 1-2

(double recipe if needed)


Ingredients:

  • 1 cup of pre-soaked & rinsed mung beans
  • 3 cups of water
  • 1/2 cup of organic pumpkin puree
  • 1 tsp of Himalayan salt
  • 1 tsp of onion powder
  • 1/2 tsp of garlic powder
  • 1/8 tsp of ground cumin
  • 1/8 tsp of ground coriander
  • 1/8 tsp of ground turmeric
  • 1/8 tsp of ground cinnamon
  • 1 peeled/minced clove of fresh garlic
  • 1 peeled/minced inch of fresh ginger
  • 1 peeled/chopped small onion
  • 1-2 peeled/chopped carrots
  • 1 tbsp of Extra virgin olive oil


Instructions:

  1. In a saucepan.. combine all ingredients together and cook on low to medium heat.. stirring consistently.. cook until creamy
  2. Top with preferred garnish & serve..

**Pre-soaking instructions: submerge mung beans in warm water.. add 1 tsp of baking soda & apple cider vinegar. Let soak for at least 8 hrs or overnight. Rinse well and cook**
