Moong Dal

"Both sweet & savory.. an Indian entrée that combines mung beans, herbs & spices

together to form a nutrient rich dish & a warm inviting way to welcome the season.." 


Ingredients:

  • 1 cup of pre-soaked mung beans*
  • 3 cups of water
  • 1/2 cup of organic pumpkin puree
  • 1 tsp of Himalayan pink salt
  • 1 tsp of onion powder
  • 1/2 tsp of garlic powder
  • 1/8 tsp of ground cumin
  • 1/8 tsp of ground coriander
  • 1/8 tsp of ground turmeric
  • 1/8 tsp of ground cinnamon
  • 1 peeled/minced clove of fresh garlic
  • 1 peeled/minced inch of fresh ginger
  • 1 peeled/chopped small onion
  • 1-2 peeled/chopped carrots
  • 1 tbsp of extra virgin olive oil


Instructions:

  1. In a saucepan.. combine all ingredients.
  2. Cook on low to medium heat.. stirring consistently.
  3. Cook until creamy.
  4. Top with preferred garnish & serve.. Enjoy!


*Pre-soaking instructions: Submerge mung beans in warm water. Add 1 tsp of baking soda

and apple cider vinegar. Let soak for at least 8 hours or overnight. Rinse well and cook.
