Both sweet & savory.. an Indian entree that combines mung beans, herbs & spices together to form a nutrient rich dish & a warm inviting way to welcome the season..
Serves 1-2
(double recipe if needed)
Ingredients:
- 1 cup of pre-soaked & rinsed mung beans
- 3 cups of water
- 1/2 cup of organic pumpkin puree
- 1 tsp of Himalayan salt
- 1 tsp of onion powder
- 1/2 tsp of garlic powder
- 1/8 tsp of ground cumin
- 1/8 tsp of ground coriander
- 1/8 tsp of ground turmeric
- 1/8 tsp of ground cinnamon
- 1 peeled/minced clove of fresh garlic
- 1 peeled/minced inch of fresh ginger
- 1 peeled/chopped small onion
- 1-2 peeled/chopped carrots
- 1 tbsp of Extra virgin olive oil
Instructions:
- In a saucepan.. combine all ingredients together and cook on low to medium heat.. stirring consistently.. cook until creamy
- Top with preferred garnish & serve..

**Pre-soaking instructions: submerge mung beans in warm water.. add 1 tsp of baking soda & apple cider vinegar. Let soak for at least 8 hrs or overnight. Rinse well and cook**
