Simple never tasted so good.. and so quick and easy to make! When you want to indulge a little on some fresh baked cookies.. still keeping it healthy.
Ingredients:
- ½ cup of organic coconut oil
- 6 tbsp of organic pureed pumpkin
- 1 ½ cups of gluten-free flour
- ¼ tsp of gluten-free baking powder
- ¼ tsp of gluten-free baking soda
- ½ cup of organic coconut sugar
- 1 tsp of organic vanilla extract
- 1 tsp of pumpkin spice
Instructions:
- Pre-heat oven to 350 degrees. Lightly grease cookie sheet and set aside.
- Combine dry ingredients together.. then slowly adding wet ingredients to the mix.
- Mix well together and refrigerate for approximately 15 minutes.
- Once cool.. press small balls of dough down on greased cookie sheet to form cookie.
- Bake in oven for approximately 10-12 minutes or until cookies are golden brown.
- Let sit and cool for a few minutes.. serves approximately 10-12 cookies.
