Pumpkin Spice Cookies

Simple never tasted so good.. and so quick and easy to make! When you want to indulge a little on some fresh baked cookies.. still keeping it healthy.


Ingredients:

  • ½ cup of organic coconut oil
  • 6 tbsp of organic pureed pumpkin
  • 1 ½ cups of gluten-free flour
  • ¼ tsp of gluten-free baking powder
  • ¼ tsp of gluten-free baking soda
  • ½ cup of organic coconut sugar
  • 1 tsp of organic vanilla extract
  • 1 tsp of pumpkin spice


Instructions:

  1. Pre-heat oven to 350 degrees. Lightly grease cookie sheet and set aside.
  2. Combine dry ingredients together.. then slowly adding wet ingredients to the mix.
  3. Mix well together and refrigerate for approximately 15 minutes.
  4. Once cool.. press small balls of dough down on greased cookie sheet to form cookie.
  5. Bake in oven for approximately 10-12 minutes or until cookies are golden brown.
  6. Let sit and cool for a few minutes.. serves approximately 10-12 cookies.
