Spicy Mung Bean Quinoa

Ginger and Turmeric gives this dish a naturally spicy flavor.. while also providing immune boosting and strengthening benefits.


Ingredients:

  • 1-2 tbsp of extra virgin olive oil
  • 1 small minced onion
  • 1-2 cloves of minced garlic
  • Approximately 1 inch piece of fresh ginger, grated
  • 1/2 tsp of ground onion
  • 1/4 tsp of ground turmeric
  • 1/8 tsp ground coriander
  • 1/8 tsp of black pepper
  • 1 1/4 tsp of Himalayan pink salt
  • 3-4 cups of water
  • 1 cup of organic quinoa
  • 1 cup of cooked mung beans


Instructions: 

  1. Heat olive oil & caramelize onion, garlic & ginger in pot.
  2. Add a few tablespoons of water.
  3. Add ground onion, turmeric and coriander.
  4. Add cups of water.. quinoa and cooked mung beans.. along with salt & pepper.
  5. Simmer until quinoa is fully cooked.
  6. Serve alongside your favorite sauteed vegetables and garnish with fresh herbs like cilantro..
