Ginger and Turmeric gives this dish a naturally spicy flavor.. while also providing immune boosting and strengthening benefits.
Ingredients:
- 1-2 tbsp of extra virgin olive oil
- 1 small minced onion
- 1-2 cloves of minced garlic
- Approximately 1 inch piece of fresh ginger, grated
- 1/2 tsp of ground onion
- 1/4 tsp of ground turmeric
- 1/8 tsp ground coriander
- 1/8 tsp of black pepper
- 1 1/4 tsp of Himalayan pink salt
- 3-4 cups of water
- 1 cup of organic quinoa
- 1 cup of cooked mung beans
Instructions:
- Heat olive oil & caramelize onion, garlic & ginger in pot.
- Add a few tablespoons of water.
- Add ground onion, turmeric and coriander.
- Add cups of water.. quinoa and cooked mung beans.. along with salt & pepper.
- Simmer until quinoa is fully cooked.
- Serve alongside your favorite sauteed vegetables and garnish with fresh herbs like cilantro..
